About the recipe

Gua Bao – also known as a Taiwanese burger – is a popular street food snack from Taiwan. It consists of a steamed, soft yeast bun (folded like a taco) traditionally filled with braised pork belly, pickled vegetables, fresh cilantro, and ground peanuts. The combination of a fluffy bun, tender meat, and crunchy topping makes Gua Bao a true taste experience. Today, there are also modern versions with chicken, tofu, or vegetarian fillings.

•400 g flour

•1 packet of dry yeast

•1 tsp baking powder

•1 tbsp sugar

•1/2 tsp salt

•250 ml lukewarm water

•2 tbsp vegetable oil (sunflower or rapeseed)

•Optional 2 tbsp milk (makes it a little softer)

Preparation:



1. Prepare the dough:

•Mix the dry yeast with the sugar in lukewarm water and let it stand for about 10 minutes until it foams slightly.

•Put flour, salt and baking powder in a bowl.

•Add the yeast mixture, oil, and milk if necessary, and knead everything into a smooth dough (at least 10 minutes by hand or 5 minutes with a machine)


2. Let the dough rise:

•Cover the dough and let it rise in a warm place for about 1-1.5 hours until it doubles in size.


3. Forms:

•Knead the dough on a lightly floured surface and divide it into about 6 portions (depending on the size you want)

•Roll out each part oval, cut baking paper to size and place between and then fold in (taco shape)

•Place on baking paper so they don’t stick


4. Second walking time:

•Let the formed buns rest again, covered, for about 20-30 minutes


5. Steaming:

•Steam in a steamer (or bamboo steamer) over boiling water for about 15-20 minutes.

Do not open the lid during this time!!!


Filling: you can use whatever you like
